Daily Vegan Post - Cheesy Sausage Gnocchi

INGREDIENTS
1/2 lb. fresh Italian sausage (about 4 links)
2 tbsp. extra-virgin olive oil
1 (17.5-oz) bag fresh gnocchi
1 c. water
2 c. marinara
8 oz. fresh spinach, roughly chopped
2 garlic cloves, grated or very finely minced
1 (16-oz.) ball fresh salted mozzarella, torn into bite-sized pieces
Fresh parsley or basil leaves, for serving
Red pepper flakes, for serving
DIRECTIONS
  1. Remove sausage from casing and tear into bite-sized pieces. Heat a large (at least 12”) oven-safe, non-stick or enamel-coated skillet over medium heat until hot. Add sausage and cook, stirring occasionally, until golden and cooked through, about 5 minutes. Transfer sausage to a bowl.
  2. In the same skillet, add the oil. When hot, add the gnocchi and cook, stirring occasionally, until the gnocchi is golden and crispy, about 8 minutes.
  3. Add water and marinara to the pan, scraping up any browned bits. Stir in half the mozzarella until mostly melted into the sauce, then fold in spinach until wilted.
  4. Remove pan from heat and stir in sausage and grated garlic.
  5. Move oven rack to top shelf and preheat broiler to high. Scatter remaining mozzarella over the surface of the gnocchi. Broil until the cheese is melted and golden, about 3 to 6 minutes depending on your broiler.
  6. Let cool for 5 minutes before topping with parsley or basil and red pepper flakes.
